Ever since I went to Belgium, I've been dying to try to make Belgian waffles of my own. Those things were delicious! A few months after returning from Belgium, my husband and I found the ever growing popular Waffle Love truck. It was basically the real thing. I was stoked. After having a Waffle Love waffle, I started searching Google. And I found a recipe that was great! I can't take credit for coming up with the recipe, but it certainly was good!
Copy Cat Leige Waffle
Ingredients:

- 3/4 cup whole milk, scalded and cooled to warm milk
- 2 tablespoons water, warmed
- 1 1/2 teaspoons sugar
- 2 teaspoons instant yeast
- 2 large eggs, lightly whisked
- 1 cup unsalted butter, softened
- 3 tablespoons honey
- 1 tablespoon brown sugar
- 2 tablespoons white sugar
- 3 teaspoons vanilla
- 4 cups bread flour
- 2 cups belgian pearl sugar (You can buy it at Orson Gygi or Walmart.com)
Instructions:
- add the 1 1/2 teaspoons of sugar to the milk and water and add the yeast, stirring to combine. Allow the yeast to proof, or get foamy and puffy.
- In a large bowl, beat together the butter and sugars. Add the egg, honey and vanilla. Stir together and add the yeat mixture. Place in a standing mixer with the dough hook and add 2 cups of flour. Mix until the dough is thoroughly incorporated, and add the remaining flour, cover with plastic wrap and allow to rest for 4 hours, up to 24 hours. Then punch down and knead in the pearl sugar. Separate into 8 to 10 balls and place on a hot, greased waffle iron. Cook until golden brown and serve with any types of toppings! (My personal favorites are banana, strawberry, or nutella. But you really can't go wrong with any type of topping here.)
