People probably think I'm obsessed, and quite honestly, I probably am. I just can't get enough lime. Especially Key Lime Pie. Which is funny, because before college, I'd never really had Key Lime anything let alone pie. Thanks to a roommate who introduced it to me, I'm now addicted. This recipe was even better than the first. And the best part, it is relatively low fat and super SUPER easy to make. I'm dying just thinking about it. My husband isn't a huge key lime pie fan, but even he went back for a second slice. Anyway, here is it.
Light Key Lime Pie:
1 box (small) lime jello (you can use sugar free, we didn't)
1/4 C. boiling water
2 - 8oz containers lime yogurt
8 oz fat free cool whip
Instructions:
1. Dissolve jello in boiling water, cool slightly
2. Stir in yogurt
3. Fold in cool whip
4. Pour into crust and chill for about 2 hours
5. ENJOY!
It's so easy. Seriously.
Graham Cracker Crust:
I used the same crust that I did before. It's not low fat, but I googled it and there are plenty out there to try. But here is the one I used.
1 1/2 cups finely crushed graham cracker crumbs
1/3 cup white sugar
6 tablespoons butter, melted
1/2 teaspoon ground cinnamon (optional)
Directions:
1. Mix graham cracker crumbs, sugar, melted butter (or margarine) and cinnamon until well blended. Press mixture into an 8 or 9 inch pie plate.
2. Bake at 375 degrees for 7 minutes. Cool.
